And why?
Because in these ever changing times, making bread brings you back into the Now. Into the only thing that we know to be true. After all the future is just a story created out of thought. As is the past.
Therefore any activity that connects you back into the present moment is helpful.
When you are in the present moment there is no thought. No thought about what might be, or what might happen.
And in that space there is just peace. And all of us could do with that right now.

What Do You Eat Soda Bread With
Because of its shape, this gluten and yeast free soda bread isn’t the best bread for sandwiches.
For that you’ll probably want something more like my gluten free loaf recipe.
This bread, however, is perfect for eating warm from the oven slathered in butter.
And that’s pretty much what happened to this whole loaf!
Soda bread is also great to serve up as a side with stews or soups.
Try it with my fiery carrot, chilli and ginger soup or on the side of my gluten free roast chicken soup.
You can also toast it and top it with anything you fancy too. It’s really very versatile!
Some people also add raisins or currants to their soda bread, though I’m not the biggest fan of this kind of dried fruit so I shall be steering clear. Feel free to go nuts though!
Can I Freeze Gluten
Yes, you can freeze this gluten free bread loaf. After it has completely cooled, slice the loaf into equal slices. We like to place a piece of parchment paper or in between each slice, so it’s easy to pull it out of the freezer.
You can either defrost the bread in the microwave or you can let it sit at room temperature until it has thawed.

The Pros And Cons Of Yeast
There are a few pros and cons of using yeast. Not just in bread, but also in general. So let’s talk about some of the pros and cons of yeast.
Pros of yeast:
- helps bread rise and get nice and fluffy
- creates a unique flavor in the bread
- the right amount can support a healthy gut
Cons of yeast:
- can be troublesome for folks with gastrointestinal issues or candida overgrowth
- yeasted baking takes extra time for the rising
- yeast can be quite finicky and needs to have a very specific temperature
- many people have allergies to yeast
I’m not someone who struggles with yeast, but I know many of you are, so I wanted to create a gluten-free yeast-free bread that you can make at home and still love.
So if you’re a sandwich , but your body does not tolerate yeast, it can be hard to find a bread recipe that you can actually enjoy. That’s exactly why I created this recipe for you
What Is Psyllium Husk And What Is Its Role In Gluten Free Bread

This is probably the only unfamiliar ingredient in the list above but one that is absolutely crucial if you want to bake proper gluten free bread.
And before you ask: there is no substitute for psyllium husk.
Psyllium husk is available in two forms: as the rough husk or as a fine powder. This recipe uses the rough husk, which has the following appearance:
When its mixed with water, psyllium husk forms a gel and this is what acts as the gluten substitute, both in the dough and in the baked loaf.
Before baking, the psyllium gel helps to create a dough that can be kneaded and shaped . It also gives the dough enough elasticity so that it can trap the gas produced through the yeast action and expand during the bulk fermentation and the final proof.
In the final baked loaf, psyllium is responsible for the characteristic elasticity and flexibility of the bread, as well as its amazing chewy texture with an open crumb.

Why Make Gluten Free Yeast Free Bread Rolls Rather Than A Big Loaf
The obvious choice for yeast free bread is usually Soda Bread. But particularly when made gluten free, it can be quite dense, or have a texture more like cake than bread. This is not soda bread. But Nonetheless, making bread rolls allows the dough to rise better, as there is less weight to contend with. But it also means the rolls can be frozen as easy individual portions Great for grabbing fresh as and when needed and perfect for countering the potential short shelf-life that is so common with gluten free bread.
When I create a recipe though, texture is key. And making rolls would guarantee a greater chance of making an alternative with a bread texture.
How To Eat Soda Bread
Soda bread has a similar texture to sourdough bread. As such, I would highly recommend you toast your bread first, before enjoying it. Without toasting, it can be quite bland, and also quite dense.
If you dont have a toaster, you can easily pan toast it in a non-stick pan or in an oven, using the oven racks as a toaster.

Make Ahead And Storing Suggestions
You can easily make this gluten free naan ahead of time. To make it ahead, make the dough, wrap it in plastic wrap and keep it in the fridge for up to one day before you make it. Just make sure to let the dough sit on the counter for at least 20 minutes before you roll it out.
To store naan bread after you have made it, let it cool completely. Then keep it in an airtight container for up to 5 days.
To reheat naan bread, warm it up in a cast iron pan on medium heat for 2-3 minutes or in the oven at 390 degrees for 5-7 minutes.
How To Store Easy Gluten
Like a good artisanal loaf, you can actually leave this bread out on the counter for up to 24 hours! I just flip the cut side down on the cutting board or a plate, so the exposed middle doesnt dry out when exposed to the air. If you happen to pull this loaf out of the oven in the evening, just leave it out until morning, then enjoy all day or wrap it.
To store, wrap in any airtight container, and store on the counter.
I dont recommend refrigerating this bread, because it contains gelatin, so chilled, the breads texture will change.
To freeze for longer term storage, pre-slice the bread. Then freeze for 30 to 60 minutes so slices stay separate. Then wrap and freeze for up to 3 months. To eat, just pop off the number of slices you need, and toast or warm gently.

Why To Buy Organic White Rice Flour For Baking Bread
Its common these days to buy brown rice flour and to buy conventional flour so why buy organic white rice flour?

What Is The Best Type Of Bread Pan For Baking Gluten
I test baked this gluten-free bread in two different types of bread pans. I used both a 9-inch x 4-inch Small Pullman loaf pan and a Wilton 9-inch x 5-inch non-stick pan.
I highly recommend using the 9-inch x 4-inch small Pullman loaf pan with this recipe. The Pullman loaf pan has a narrow bottom with steep, high sides and a ridged surface that gives gluten-free bread dough the extra support to help it rise the best. I did not use the lid in this recipe. I only bought the Pullman loaf pan.
If you bake the gluten-free bread in a 9-inch x 5-inch bread pan, it will not rise as high because the pan is larger than the Pullman loaf pan. Even though it does not rise as high, it still as delicious!
How To Store Fresh Baked Bread

This fresh-baked bread stays soft for 2-3 days after it’s been baked. You’ll want to let it cool to room temperature before you slice it. We like to store it whole, in a sealed container, or wrap it tightly with cling wrap, and slice it as we need it.
After a day or two, we will freeze any bread that’s left.

How To Make Chia Egg
To make a chia egg, combine 1 tablespoon of chia seeds with 2 ½ tablespoon of water. One chia egg equals 1 chicken egg. If you would like to know more about chia eggs. Minimalist bakes has a great chia egg recipe post.
Almond meal/flour can be expensive, especially when buying at the grocery store. I buy mine in bulk at the wholefoods store and refrigerate it.
How To Make Sandwich Bread Without Yeast
I had already developed this very yeast free gluten free bread recipe for the blog after being asked a few times over the years whether there was any way to substitute yeast in my yeast bread recipes. At first I figured, um, no way. Its yeast bread. ?
And generally, there is no substitute for yeast. Chemical leaveners such as baking soda and baking powder arent yeast substitutes.
Not really. Theyre completely different ways of baking, they react more quickly, and produce a much different result in baking.
Usually, baking soda is used in quick breads like banana bread, and tend to be sweet, not savory. But that doesnt mean that I couldnt develop an entirely different recipe for yeast free bread that could be used for sandwiches.
I tried to give the bread as much chance of success as possible, so little by little, failure after failure, I added more support. It turned out that egg whites were really the key to adding structure and support.
Even though egg whites are mostly liquid, they actually tend to dry out baked goods so the recipe would need plenty of moisture for balance.
This recipe was such a success when I first posted it on the blog many years ago. I ended up deleting the post, though, most likely in a fit of shame.
The photos were just horrid. I remember also being a little nutso with the text overlays that were popular on blogs at the time.

St Rise: Bulk Fermentation
For the bulk fermentation, place the dough into a lightly oiled bowl, cover with a damp tea towel and let the dough to rise for 1 hour in a warm place. It will approximately double in volume.
The purpose of the bulk fermentation is primarily flavour development this is what ensures that your loaf will have that wonderfully complex flavour we associate with properly baked bread.
Folding In The Egg Whites
In the batter bowl, start by gently mixing a large spoonful of the egg whites into the batter. Use a spatula and gently fold a small amount in. This lightens the batter up a bit.
Now add the rest of the whipped egg white and gently fold and fold and fold. Folding takes longer than if you were to just stir, but the process creates a light bread . Fold just until all egg white is completely incorporated into the batter, being careful not to overmix.
Overdoing it crushes the lightness that the egg whites are creating.

Baking Soda And Lemon Juice
Running low on yeast and baking powder? Don’t worry. There are plenty of other options out there to help your dough rise, one of our favorites being baking soda and lemon juice. In traditional bread making, when yeast is combined with flour and water, sugars are then released. The yeast consumes these sugars and releases carbon dioxide in the process. This carbon dioxide production is what helps your bread rise.
To create the same reaction and achieve similar results, simply mix baking soda with an acid like lemon juice. While this may seem easy enough, the tricky part is knowing how much baking soda and acid are needed to substitute the yeast called for in a recipe successfully. To produce the right amount of carbon dioxide, add equal parts of baking soda and lemon juice to equal the amount of yeast the recipe calls for.
Example: If a recipe calls for two tablespoons of yeast, you’ll want to add one tablespoon of baking soda and one tablespoon of lemon juice to replace it successfully. Then, bake as usual and enjoy your delicious bread, straight from the oven.

While Im well aware that dairy and gluten free yeast free bread rolls may be a bit niche, if you do make them let me know. I suspect that if you need to make them, you have already had a hard time sourcing anything that resembles bread. So, Id love to know whether they have brought you any happiness.
But even if you dont have to eat bread rolls which are this specific, I thoroughly recommend them as a quick, easy and delicious bread bake. They make perfect little soft dinner rolls and are super-easy to whip up using a muffin tin.

Tips For Baking Gluten
- Make sure you have fresh yeast .
- Always use room temperature ingredients! Yeast thrives in a warm environment.
- You can bring your egg whites to room temperature by pacing the whole large eggs in a bowl of really warm water and let them sit for 5 minutes.
- Always use gluten-free non-stick cooking spray to grease your pan and the plastic wrap. I like either coconut oil or olive oil cooking spray.
- Bake the bread on the middle rack.
- I also like to bake my bread horizontally for even baking.
- Remove the loaf from the baking pan and place it on a cooling rack. If the bread cools in the pan, the steam can get trapped and the loaf can get soggy, especially on the bottom.
- Use a serrated knife to slice the bread. Using a smooth-blade knife can squish the bread.

Can I Make This Recipe In A Bread Machine
Yes, you can! Even though I developed this gluten-free bread recipe to be an oven-baked recipe, I also tested it in my bread machine. Just swap out these ingredients for the ingredients in my gluten-free bread machine recipe and follow the recipes directions. I always recommend using a bread machine that has a gluten-free setting.
Baking The Gluten Free Bread
Once proofed and doubled in volume:
Bake the dough with steam at 480 ºF for 20 minutes, then remove the tray with water, reduce the oven temperature to 450 ºF and bake for a further 40 50 minutes.
