Whats The Difference Between White Whole Wheat Flour And Regular Whole Wheat Flour
Its actually a different variety of wheat. White whole wheat flour is made with hard white spring or whiter wheat. It includes the bran, germ, and endosperm, making it whole wheat. Since its made with hard white wheat instead of hard red wheat, like whole wheat flour, it has a paler color and its taste is milder. Youll still taste more of a nutty flavor compared to regular all-purpose flour because it includes the fibrous bran and germ of the wheat, but its a milder whole-wheat flour so its great if youre getting used to the taste of whole wheat.

Cook your flatbread on a griddle or in a skillet. Whatever works! It is really easy cooking several at the same time on a griddle, kinda like pancakes.
As I mentioned above, this recipe is super versatile. Experiment with different thicknesses, sizes, and cooking methods. Here are some ideas:
- If you fry the bread in a little more oil and roll it out to about ¼ inch thickness, youre looking at bread more like a scone or fry bread or
- You can roll them out even thinner and use the flatbread as more like a wrap or gyro.

This pita bread without yeast is a play on the 2 ingredient dough that Ive used in many recipes before.
Essentially, if you combine flour & Greek yogurt, it creates a dough that puffs up as if you had used yeast.
The major benefit to doing this is:
Recipes like this often call for self-rising flour, but that is not a staple in everyones kitchen. But dont sweat it self-rising flour is simply all-purpose flour that has been pre-mixed with baking powder and salt.
In this case, were just going to use all 3 of those ingredients instead. But if you have self-rising flour, it will be even easier for ya.

About This Flatbread Recipe

Flatbreads are not new to me because back home in India every home makes a few flatbread recipes at least a couple of times a week. We have some of the most amazing variations as well.
Ideally, there is no recipe for flatbread. You need only flour, salt, and water to make a flatbread. All you do is add a little salt to the flour and use just enough water to make a dough. Form balls, roll them into discs then bake it on a skillet until beautifully cooked. So you see, flatbread is probably the easiest of all bread.
My recipe adds a bit more flavor and lightness with the baking soda and butter. As you can see in the video below, it is a very simple and easy recipe. I often make it with my kids. The lack of yeast makes the dough easier for kids to handle.

Easy Gluten Free Flatbread No Yeast Recipe
Serves
- 1/3 cup / 45g gluten-free all purpose flour, plus more for dusting
- 3/4 tsp baking powder
- 1/4 cup / 60ml / 54g thick Greek yoghurt
- Pinch of sea salt
Method
- 1Mix the flour, baking powder and salt in a bowl. Add the yoghurt and mix well with a spoon until it forms a dough.
- 2Lightly sprinkle some extra flour on a clean surface and knead the dough until smooth. Split the dough into two portions and roll into balls. Press each ball out into a thin round using your fingers. If the dough gets too sticky, lightly sprinkle over some extra flour. .
- 3Heat a frypan over a medium-high heat. Dont add any oil. Fry each flatbread for about 1 minute each side or until lightly browned in patches. Stack the flatbreads on top of each other and cover with a clean tea towel to keep them warm until ready to serve.
Notes
1. Flour Buckwheat flour also works. Buckwheat flour gives a more earthy flavor and slightly less pliable flatbread. You can also use regular all purpose flour, wholewheat flour or spelt flour if you dont need the flatbread to be gluten-free.
2. Yogurt Thick Greek yogurt works best in this recipe. For a vegan, dairy-free option you can use plant-based Greek yoghurt alternatives.
3. Storage The flatbreads are best served warm shortly after cooking. They become less flexible as they get cold, but you can easily re-heat them in a microwave, oven or hot pan. Leftovers can be frozen between pieces of baking paper and re-heated when ready to serve.

Meal Prep And Storage
- SERVE: Serve with your favorite toppings, as an appetizer or main course with side salad.
- PREP AHEAD: Make dough, roll into balls and tightly cover with plastic wrap until ready to use. Uncooked dough will last in fridge for 3 days or freezer for 1 month. Cooked flatbread that isnt topped can be wrapped well and stored in the fridge for 5 days, freezer for 3 months. Re-crisp cooked flatbread in 450 preheated oven for 5 minutes.
- STORE: Store leftover flatbread in airtight container in the fridge for 5 days. Reheat in preheated oven at 450 until heated through.
- FREEZE: Uncooked dough can be frozen for 1 month. Cooked flatbread can be frozen for 3 months. Defrost in the fridge. Bring dough to room temperature before rolling out.

The flatbread with baking powder only needs to rest for 10 minutes. After that, heat up a coated pan and divide the dough into about 8 portions. Fry them one by one with a little oil at medium heat from both sides. The dough is quite sticky, so it might be easy to take a spoon of dough, put it into the pan and press it flat while turning it with the spatula. When your flatbread gets a light brown color on both sides it is ready to serve.

No Yeast Flatbread Ingredients
- WHOLE GRAIN FLOUR: I used whole wheat flour in these photos. You can definitely use gluten-free all purpose flour in this recipe with great results.
- OLIVE OIL: Youll need 3 Tablespoons extra virgin olive oil to make the dough. I like to brush another Tablespoon onto the rolled out and partially baked dough for crispy pizzas.
- FINE GRAIN SALT: The fine grains of salt dissolve better. Its OK to use sea salt if its fine ground, but kosher salt or any coarse grind salt will not dissolve as well.
- CORN MEAL: Just a dusting to sprinkle onto the baking pan or pizza stone. Or you could use unbleached parchment paper and skip it. I think coarse grind cornmeal works best.

How Do You Store The Flatbreads
You can make extra dough and freeze it, defrosting it before you intend to make flatbreads you may need a little more flour when rolling. You can also freeze the flatbreads once made by wrapping them well in clingfilm. Just reheat them in a hot frying pan or skillet.
If you want to use them a few days later, you can wrap them up and put them in the fridge and reheat them the same way as above or for a minute in a microwave.

I love flatbread. Pita, naan, wraps, literally anything in the flatbread category. But for some reason, Id never tried making my own. So I decided to tweak my olive oil bread recipe into a flatbread recipe and I figured while I was changing it up, I should test out a whole wheat version. In just a few minutes, I had an easy whole wheat flatbread recipe, no yeast required!
This recipe uses white whole wheat flour. I bought it at Trader Joes but if you dont have a Trader Joes near you, check out King Arthur Flour. They have it at most grocery stores or you can order it online. If you dont want to buy another bag of flour, you could do a blend of half whole wheat and half all-purpose flour.
Easy Homemade Bread Without Yeast Recipe
With this easy recipe, you will have an output not far from a bread made with yeast.
NOTE: Unlike any bread recipes or baking recipes, this easy homemade bread recipe may take a little longer to be done. It takes about 25 minutes to make the bread dough, 9 minutes to rest the dough, and another 30 minutes to bake the bread. But all in all, this is still a great recipe you must try.
